VIJAY'S 'WARM OVEN' IS A FIRST IN WALES

One of Wales' leading Indian proprietors Vijay Bhagotra has opened the Principality's first Indio Med restaurant at the Court Colman Hotel, Pen-y-Fai, near Brigend.

Diners at the Bokhara - meaning 'warm oven' - can see their food being prepared in the open plan kitchen and on television screens sited around the dining room.

"I want our customers to enjoy the whole dining experience and witness their dishes being created by one of the UK's leading Indian chefs William Bux and his team," said Vijay who moved to the UK in the 1970s purchasing the Colman Court three years ago.

"We are changing people's perception of Indian food showing that dishes are not just hot and spicey Our range of menus from the North West Frontier region are delicately flavoured with various spice blends."

Vijay and his French wife Isabelle have established one of Wales' leading independent hotels, voted into the Top Ten of Indian UK restaurants by the Independent newspaper.
